A rich and velvety bisque featuring crab and shrimp, balanced with aromatics, herbs, and a touch of lemon.

- 1 lb crab meat (fresh or canned)
- 1 lb large shrimp, peeled and deveined
- 4 tablespoons butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable or seafood stock
- 1 cup heavy cream
- 1/2 cup white wine
- 2 tablespoons lemon juice
- Fresh parsley, chopped
- Fresh thyme
- Salt and pepper to taste
Instructions
- Start by melting butter in a large pot over medium heat. Add a chopped onion and sauté until translucent, then stir in minced garlic and cook for an additional minute.
- Pour in a splash of white wine, allowing it to reduce for a couple of minutes. Then, add the crab meat and shrimp; stir gently to combine.
- Pour in your seafood or vegetable stock, bringing the mixture to a gentle simmer. Allow it to cook for about 10 minutes.
- Stir in heavy cream and allow the bisque to simmer for another 5-10 minutes, watching that it doesn’t boil aggressively.
- Finish with a squeeze of lemon juice and season with salt and pepper. Stir in fresh herbs just before serving.
- Ladle the bisque into bowls and garnish with extra herbs or a drizzle of cream. Serve with toasted bread for dipping.
Notes
Avoid boiling the bisque after adding cream to maintain a smooth texture.
