- 1 lb boneless chicken (breast or thighs)
- 1 can (13.5 oz) coconut milk
- 2 cloves garlic, minced
- 1 inch fresh ginger, minced
- 1 stalk lemongrass, minced
- 4 cups chicken or vegetable broth
- 1 cup carrots, chopped
- 1 cup bell peppers, chopped
- 1 cup mushrooms, sliced
- 1/2 cup cilantro, chopped
- Juice of 1 lime
- Chili (fresh or paste, to taste)
- Salt and pepper, to taste
- Oil for sautéing
Instructions
- Heat a drizzle of oil in a large skillet. Add minced garlic, ginger, and lemongrass. Sauté until fragrant, about 2 minutes.
- Add chicken pieces, seasoning with salt and pepper. Cook until golden brown on all sides.
- Pour in the broth and coconut milk. Stir and bring to a simmer.
- Add chopped carrots and bell peppers; simmer for 10-15 minutes until chicken is cooked through.
- Stir in cilantro, lime juice, and chili; adjust seasoning as needed.
- Ladle soup into bowls, garnish with cilantro and lime wedges. Serve hot.
Notes
For a vegetarian option, substitute chicken with tofu or shrimp. Adjust chili to personalize the heat level.
