Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 can (13.5 oz) coconut milk
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 stalk lemongrass, minced
  • 4 cups chicken or vegetable broth
  • 1 cup carrots, chopped
  • 1 cup bell peppers, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup cilantro, chopped
  • Juice of 1 lime
  • Chili (fresh or paste, to taste)
  • Salt and pepper, to taste
  • Oil for sautéing

Instructions

  1. Heat a drizzle of oil in a large skillet. Add minced garlic, ginger, and lemongrass. Sauté until fragrant, about 2 minutes.
  2. Add chicken pieces, seasoning with salt and pepper. Cook until golden brown on all sides.
  3. Pour in the broth and coconut milk. Stir and bring to a simmer.
  4. Add chopped carrots and bell peppers; simmer for 10-15 minutes until chicken is cooked through.
  5. Stir in cilantro, lime juice, and chili; adjust seasoning as needed.
  6. Ladle soup into bowls, garnish with cilantro and lime wedges. Serve hot.

Notes

For a vegetarian option, substitute chicken with tofu or shrimp. Adjust chili to personalize the heat level.
