Ingredients

  • Chicken thighs or breasts, cut into bite-sized pieces
  • Italian sausage, sliced
  • Heavy cream (or half-and-half or coconut milk)
  • Chicken broth (or vegetable broth)
  • Fresh garlic, diced
  • Onion, diced
  • Carrots, chopped
  • Celery, chopped
  • Mushrooms, sliced
  • Fresh thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and garlic. Sauté for about 5 minutes until tender and fragrant.
  2. Add sliced sausage to the pot and cook until browned on all sides.
  3. Toss in chicken pieces and stir until they start to brown.
  4. Add chopped carrots, celery, mushrooms, and pour in the broth until covered. Bring to a gentle simmer.
  5. Let the stew simmer for about 20 minutes, stirring occasionally.
  6. Stir in the heavy cream and herbs. Adjust seasoning with salt and pepper, and add red pepper flakes if desired.
