Ingredients
- Chicken thighs or breasts, cut into bite-sized pieces
- Italian sausage, sliced
- Heavy cream (or half-and-half or coconut milk)
- Chicken broth (or vegetable broth)
- Fresh garlic, diced
- Onion, diced
- Carrots, chopped
- Celery, chopped
- Mushrooms, sliced
- Fresh thyme or rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions and garlic. Sauté for about 5 minutes until tender and fragrant.
- Add sliced sausage to the pot and cook until browned on all sides.
- Toss in chicken pieces and stir until they start to brown.
- Add chopped carrots, celery, mushrooms, and pour in the broth until covered. Bring to a gentle simmer.
- Let the stew simmer for about 20 minutes, stirring occasionally.
- Stir in the heavy cream and herbs. Adjust seasoning with salt and pepper, and add red pepper flakes if desired.
- Ladle the stew into bowls and garnish with fresh herbs. Serve with crusty bread or over grains.
