Ingredients

  • 1 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup pistachios, chopped
  • 1/4 cup honey
  • 1/4 cup nut butter (almond or peanut)
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare your ingredients and set a mixing bowl aside.
  2. In a medium bowl, combine rolled oats, dried cranberries, pistachios, chia seeds, and a pinch of salt.
  3. In a separate bowl, whisk together honey, nut butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until well combined.
  5. Cover the bowl and refrigerate for about 30 minutes.
  6. Once chilled, form small balls (about the size of a tablespoon) and place on a parchment-lined baking sheet.
  7. Return the formed bites to the fridge for another 30 minutes to stabilize.
