Ingredients

- 1 cup rolled oats
- 1/2 cup dried cranberries
- 1/2 cup pistachios, chopped
- 1/4 cup honey
- 1/4 cup nut butter (almond or peanut)
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare your ingredients and set a mixing bowl aside.
- In a medium bowl, combine rolled oats, dried cranberries, pistachios, chia seeds, and a pinch of salt.
- In a separate bowl, whisk together honey, nut butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Cover the bowl and refrigerate for about 30 minutes.
- Once chilled, form small balls (about the size of a tablespoon) and place on a parchment-lined baking sheet.
- Return the formed bites to the fridge for another 30 minutes to stabilize.

These bites can be stored in an airtight container for up to a week in the fridge or frozen for up to three months.
