- 4 oz goat cheese, softened
- 1 cup dried cranberries, chopped
- 1 cup pistachios, chopped
- 2 tbsp fresh chives or parsley, finely chopped
- 2 tbsp honey
Instructions
- Gather your ingredients and ensure the cream cheese is at room temperature.
- In a mixing bowl, combine cream cheese and goat cheese until smooth.
- Fold in cranberries and chopped pistachios, reserving some for later.
- Add in chopped herbs and honey, mixing gently until combined.
- Shape the cheese mixture into a log.
- Roll the log in the reserved cranberries and pistachios for an even coating.
- Wrap in parchment paper or plastic wrap and refrigerate for at least 120 minutes.
- Slice and serve with crackers, crostini, or fresh vegetables.
