Ingredients

  • 4 oz goat cheese, softened
  • 1 cup dried cranberries, chopped
  • 1 cup pistachios, chopped
  • 2 tbsp fresh chives or parsley, finely chopped
  • 2 tbsp honey

Instructions

  1. Gather your ingredients and ensure the cream cheese is at room temperature.
  2. In a mixing bowl, combine cream cheese and goat cheese until smooth.
  3. Fold in cranberries and chopped pistachios, reserving some for later.
  4. Add in chopped herbs and honey, mixing gently until combined.
  5. Shape the cheese mixture into a log.
  6. Roll the log in the reserved cranberries and pistachios for an even coating.
  7. Wrap in parchment paper or plastic wrap and refrigerate for at least 120 minutes.
