- 4 bell peppers (red, yellow, or green)
- 1 cup lump crab meat
- 1 cup shrimp, peeled and deveined
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup bread crumbs (or panko)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme
- 1 cup shredded cheese (optional)
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft, about 3-4 minutes.
- Add shrimp and cook until pink, around 3-4 minutes.
- In a bowl, combine shrimp mixture, crab meat, bread crumbs, herbs, and spices.
- Stuff the bell peppers with the mixture.
- Place them in a baking dish, sprinkle with cheese if desired, and add a splash of water.
- Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes.
- Let cool briefly before serving, garnished with fresh herbs if desired.
Notes
Substitute crab meat with tuna or lobster; for a veggie version, use sautéed mushrooms or zucchini.
