- 2 pounds beef chuck roast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 stalks celery, chopped
- 3 carrots, chopped
- 2 potatoes, diced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 cup dry red wine (or balsamic vinegar)
- 1 bay leaf
- 1 teaspoon fresh thyme
- Fresh parsley for garnish
Instructions
- Season the beef with salt and pepper. In a heavy-bottomed pot, heat olive oil over medium-high heat and sear the beef until browned on all sides. Remove and set aside.
- In the same pot, add onions, garlic, and celery. Sauté until softened and beginning to caramelize.
- Stir in the tomato paste and cook for 1-2 minutes. Return the beef to the pot, add carrots, potatoes, and any additional vegetables.
- Pour in the beef broth and red wine, scraping any browned bits from the bottom of the pot.
- Add bay leaf and thyme, bring to a simmer, cover, and reduce heat. Let simmer for 1.5 to 2 hours.
- Adjust seasoning with salt and pepper, and add fresh lemon juice or vinegar if desired. Garnish with parsley before serving.
Notes
Feel free to substitute vegetables or skip the potatoes based on your preferences. Searing the beef properly is key for depth of flavor.
