Delightful Christmas Swirl Pinwheel Cookies infused with peppermint and chocolate, perfect for holiday gatherings.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup milk
- 1 tsp peppermint extract
- 1/2 cup crushed candy canes
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, then beat in the vanilla and peppermint extracts.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until a dough forms.
- Divide the dough into two portions. Mix crushed candy canes into one portion.
- Roll out both doughs between parchment paper to about 1/4 inch thick.
- Layer the peppermint dough on top of the plain dough and roll them into a tight log.
- Wrap in plastic wrap and refrigerate for at least 2 hours.
- Slice into 1/4-inch rounds and place on the prepared baking sheets.
- Optionally, sprinkle with more crushed candy canes before baking.
- Bake for 10-12 minutes until edges are slightly golden. Cool on a wire rack.
Notes
Chill the dough long enough to prevent spreading. Experiment with different flavors by adding citrus zest or other extracts.
