Ingredients

- 2 cups all-purpose flour (or whole wheat flour for a nuttier flavor)
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tbsp granulated sugar
- 2 tbsp brown sugar (or coconut sugar)
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 1/2 cups buttermilk (or milk with a splash of vinegar)
- 2 large eggs
- 4 tbsp unsalted butter, melted (or coconut oil)
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, granulated sugar, brown sugar, cinnamon, and nutmeg until there are no lumps.
- In another bowl, beat the eggs and mix in the buttermilk and melted butter.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Let the batter rest for about 10 minutes.
- Heat a non-stick skillet over medium heat and add a little butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 1-2 minutes until golden brown.
- Stack pancakes high on a plate, drizzle with maple syrup, and enjoy!
Notes
Be careful not to overmix the batter to keep pancakes fluffy. Serve with fruit or toppings like whipped cream for added flavor.
