Instructions
- In a large mixing bowl, combine the dry ingredients: flour, baking powder, sugar, cinnamon, and nutmeg. Whisk until evenly mixed.
- In a separate bowl, mix the wet ingredients: pumpkin puree, milk, and eggs. Beat lightly until combined.
- Make a well in the center of the dry ingredients and pour the wet mixture in. Gently fold together until just combined, being careful not to overmix.
- Heat a skillet or griddle over medium heat and grease it with butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until both sides are golden brown.
- Stack pancakes and sprinkle chocolate chips between layers. Serve warm with maple syrup, whipped cream, or powdered sugar.
Notes
Letting the batter rest for 15-30 minutes enhances the texture of the pancakes. You can substitute ingredients for healthier options if desired.
