Ingredients

Instructions

  1. In a large mixing bowl, combine the dry ingredients: flour, baking powder, sugar, cinnamon, and nutmeg. Whisk until evenly mixed.
  2. In a separate bowl, mix the wet ingredients: pumpkin puree, milk, and eggs. Beat lightly until combined.
  3. Make a well in the center of the dry ingredients and pour the wet mixture in. Gently fold together until just combined, being careful not to overmix.
  4. Heat a skillet or griddle over medium heat and grease it with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until both sides are golden brown.
  6. Stack pancakes and sprinkle chocolate chips between layers. Serve warm with maple syrup, whipped cream, or powdered sugar.

Notes

Letting the batter rest for 15-30 minutes enhances the texture of the pancakes. You can substitute ingredients for healthier options if desired.
