Ingredients

- 1 lb boneless chicken (breast or thighs)
- 1 bunch scallions, sliced
- 3 tbsp soy sauce (low-sodium if preferred)
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 tbsp cornstarch
- 2 tbsp oil (for cooking)
Instructions
- Marinate chicken in soy sauce, cornstarch, and minced garlic for 15-30 minutes.
- Heat oil in a skillet over medium-high heat, add marinated chicken, and cook until browned (5-7 minutes). Remove and set aside.
- In the same skillet, add more oil if needed, then sauté scallions and ginger for 2-3 minutes.
- Return chicken to the skillet, add additional soy sauce, stir, and heat through for another minute.
- Drizzle sesame oil over the dish and serve with jasmine rice or a salad.
Notes
For a vegetarian option, substitute chicken with tofu. Adjust soy sauce to taste to avoid overwhelming saltiness.
