Description

Delightfully chewy cookies made with ripe bananas and old-fashioned oats, perfect for sharing and creating lasting memories.


Ingredients

  • 3 ripe bananas
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 1 egg (or 1 flax egg)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • Optional: 1/2 cup chocolate chips or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth, but still a little chunky.
  3. Cream together the softened butter and brown sugar in another bowl until light and fluffy.
  4. Beat in the egg (or flax egg) until well combined.
  5. Gradually mix the mashed bananas into the creamed mixture.
  6. In a separate bowl, whisk together the flour, oats, baking soda, salt, and cinnamon.
  7. Gently fold the dry ingredients into the wet mixture until just combined.
  8. If using, fold in chocolate chips or walnuts.
  9. Scoop tablespoon-sized dough onto the prepared baking sheet, leaving space between each cookie.
  10. Bake for 12-15 minutes or until the edges are golden brown.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best flavor, use very ripe bananas. These cookies can also be frozen for later enjoyment.
