Delightfully chewy cookies made with ripe bananas and old-fashioned oats, perfect for sharing and creating lasting memories.

- 3 ripe bananas
- 1 cup old-fashioned oats
- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1 egg (or 1 flax egg)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- Optional: 1/2 cup chocolate chips or walnuts
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the ripe bananas in a large bowl until smooth, but still a little chunky.
- Cream together the softened butter and brown sugar in another bowl until light and fluffy.
- Beat in the egg (or flax egg) until well combined.
- Gradually mix the mashed bananas into the creamed mixture.
- In a separate bowl, whisk together the flour, oats, baking soda, salt, and cinnamon.
- Gently fold the dry ingredients into the wet mixture until just combined.
- If using, fold in chocolate chips or walnuts.
- Scoop tablespoon-sized dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best flavor, use very ripe bananas. These cookies can also be frozen for later enjoyment.
