- ½ cup unsalted butter
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 cup all-purpose flour
- ½ cup cocoa powder
- 1 cup semi-sweet chocolate chips
- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- 1 cup cherry filling or fresh cherries
Instructions
- Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a medium bowl, melt the butter and mix with granulated sugar and brown sugar until fully combined. Stir in the eggs, one at a time, followed by vanilla extract.
- Sift in the cocoa powder and flour, mixing until just combined. Fold in the chocolate chips.
- Pour the brownie batter into the prepared baking pan, spreading it evenly across the bottom.
- In another bowl, beat the cream cheese until smooth. Gradually mix in the sugar, followed by the egg and vanilla extract.
- Gently fold in the cherry filling or fresh cherries into the cream cheese mixture. Spread this cheesecake layer over the brownie batter.
- Bake for 25-30 minutes, or until the edges look firm and a toothpick inserted comes out mostly clean.
- Allow the bars to cool in the pan completely before lifting them out and cutting into squares.
Notes
For a gluten-free option, substitute all-purpose flour with almond flour. Allow the bars to chill in the fridge before serving for the best texture.
