- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 2 cups diced tomatoes (canned or fresh)
- 2 tablespoons taco seasoning
- 4 cups chicken or vegetable broth
- 1 cup corn (frozen or canned)
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- Oil for cooking
- Optional garnishes: shredded cheese, avocado, cilantro, tortilla chips
Instructions
- Chop your peppers, onion, and garlic. Drain and rinse the beans if using canned.
- In a large pot over medium heat, add a splash of oil and brown the ground beef (or turkey), breaking it up as it cooks for about 5-7 minutes.
- Add diced onions, garlic, and peppers to the pot. Sauté until softened, about 3-4 minutes.
- Sprinkle in the taco seasoning and cook for an additional minute.
- Stir in the diced tomatoes, beans, corn, and broth. Mix thoroughly and bring to a bubble.
- Cover the pot, reduce the heat, and let the soup simmer for about 20-30 minutes.
- Taste the soup and adjust the seasoning as necessary.
- Ladle the soup into bowls and top with garnishes such as cheese, avocado, and cilantro.
