Description

Deliciously chewy Banana Oatmeal Bars made with ripe bananas and rolled oats, perfect for a wholesome snack or breakfast option.


Ingredients

  • 3 Ripe Bananas
  • 2 cups Rolled Oats
  • 1/2 cup Nut Butter (Almond or Peanut)
  • 2 Eggs (or Flax Eggs for vegan)
  • 1/4 cup Honey or Maple Syrup
  • 1 teaspoon Cinnamon
  • Pinch of Salt
  • Optional Add-ins: Nuts, Seeds, Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 or 9×9 inch baking pan with parchment paper.
  2. Mash the ripe bananas in a bowl until smooth, leaving a few small lumps for texture.
  3. Add nut butter and your chosen sweetener to the bananas, mixing until well combined.
  4. In another bowl, combine oats, cinnamon, and a pinch of salt.
  5. Add the dry ingredients to the wet mixture and stir until just combined.
  6. Pour the mixture into the prepared pan and spread evenly.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. Let the bars cool in the pan for 10 minutes before transferring to a wire rack. Cut into squares and enjoy!

Notes

For a delicious twist, drizzle with melted chocolate or sprinkle with almond slivers or shredded coconut before serving.
