- 3 Ripe Bananas
- 2 cups Rolled Oats
- 1/2 cup Nut Butter (Almond or Peanut)
- 2 Eggs (or Flax Eggs for vegan)
- 1/4 cup Honey or Maple Syrup
- 1 teaspoon Cinnamon
- Pinch of Salt
- Optional Add-ins: Nuts, Seeds, Chocolate Chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 or 9×9 inch baking pan with parchment paper.
- Mash the ripe bananas in a bowl until smooth, leaving a few small lumps for texture.
- Add nut butter and your chosen sweetener to the bananas, mixing until well combined.
- In another bowl, combine oats, cinnamon, and a pinch of salt.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Pour the mixture into the prepared pan and spread evenly.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for 10 minutes before transferring to a wire rack. Cut into squares and enjoy!
Notes
For a delicious twist, drizzle with melted chocolate or sprinkle with almond slivers or shredded coconut before serving.
