Description

A comforting baked tortellini casserole layered with rich marinara and melty cheese, perfect for family gatherings.


Ingredients

  • 1 pound fresh tortellini
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 8 ounces cremini or button mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Fresh basil and parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water and cook tortellini according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat, add diced onions and minced garlic, cooking until translucent. Add sliced mushrooms and sauté until browned.
  4. In a large bowl, combine cooked tortellini, sautéed vegetables, and marinara sauce. Mix well.
  5. In a baking dish, layer half of the tortellini mixture, dollop ricotta cheese, sprinkle mozzarella and Parmesan, then add the remaining tortellini mix, finishing with a generous layer of cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15-20 minutes until bubbly and golden.
  7. Let rest for 10 minutes before serving.

Notes

For a lighter dish, use a lighter marinara or homemade pesto. For vegetarian options, substitute tortellini with spinach and ricotta.
