- 1 pound fresh tortellini
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 8 ounces cremini or button mushrooms, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Fresh basil and parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Boil salted water and cook tortellini according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat, add diced onions and minced garlic, cooking until translucent. Add sliced mushrooms and sauté until browned.
- In a large bowl, combine cooked tortellini, sautéed vegetables, and marinara sauce. Mix well.
- In a baking dish, layer half of the tortellini mixture, dollop ricotta cheese, sprinkle mozzarella and Parmesan, then add the remaining tortellini mix, finishing with a generous layer of cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 15-20 minutes until bubbly and golden.
- Let rest for 10 minutes before serving.
Notes
For a lighter dish, use a lighter marinara or homemade pesto. For vegetarian options, substitute tortellini with spinach and ricotta.
