- 1 whole free-range chicken
- 1 cup soy sauce
- 4 tablespoons minced ginger
- 6 minced garlic cloves
- 2 tablespoons sugar
- 1 tablespoon five-spice powder
- Chopped scallions (for garnish)
- Sesame oil (for drizzling)
Instructions
- Marinate the chicken by rinsing it under cold water and patting it dry. Mix soy sauce, ginger, garlic, sugar, and five-spice powder in a bowl. Rub marinade all over the chicken and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 425°F (220°C).
- Place the marinated chicken on a rack in a roasting pan.
- Roast for about 90 minutes, basting with juices every 30 minutes, until skin is golden brown and internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving. Garnish with scallions and drizzle with sesame oil before serving.
Notes
Ensure to marinate for a minimum of 4 hours for best flavor. If the chicken skin isn’t crispy enough, increase the oven temperature to 450°F (232°C) in the last 10-15 minutes of roasting.
