Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until just combined.
  5. Gradually add the dry ingredients to the wet mixture, followed by the apple cider, until the dough comes together.
  6. Scoop and shape the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are still soft.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For even better flavor, consider chilling the dough for 30 minutes before baking.
