  • 2 large eggs
  • 1 cup whole milk

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and lemon zest.
  3. In another bowl, beat together eggs, milk, and vanilla extract.
  4. Make a well in dry ingredients and pour in the wet mixture. Mix until just combined.
  5. In a separate bowl, fold softened cream cheese and chopped strawberries together, then gently fold into the batter.
  6. Spoon batter into muffin tin, filling each cup two-thirds full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
