- 1 cup fresh strawberries, chopped
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder

- 2 large eggs
- 1 cup whole milk

- 8 oz cream cheese, softened
Instructions
- Preheat oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
- In a mixing bowl, whisk together flour, sugar, baking powder, and lemon zest.
- In another bowl, beat together eggs, milk, and vanilla extract.
- Make a well in dry ingredients and pour in the wet mixture. Mix until just combined.
- In a separate bowl, fold softened cream cheese and chopped strawberries together, then gently fold into the batter.
- Spoon batter into muffin tin, filling each cup two-thirds full.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Avoid overmixing the batter to ensure a lighter texture. Use ripe, firm strawberries for the best results.
