- 2–3 ripe bananas
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/4 cup melted butter or vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare your mini muffin tin.
- Mash the ripe bananas in a mixing bowl until smooth.
- In another bowl, mix the mashed bananas with granulated sugar, brown sugar, eggs, melted butter, and vanilla extract until combined.
- In a third bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined, then fold in chocolate chips.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Use overripe bananas for the best flavor and moisture. Experiment with spices like cinnamon for extra warmth.
