  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/4 cup melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your mini muffin tin.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. In another bowl, mix the mashed bananas with granulated sugar, brown sugar, eggs, melted butter, and vanilla extract until combined.
  4. In a third bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the wet mixture to the dry ingredients, stirring until just combined, then fold in chocolate chips.
  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the tin for 5 minutes before transferring to a wire rack.

Notes

Use overripe bananas for the best flavor and moisture. Experiment with spices like cinnamon for extra warmth.
