- 4 large eggs
- 1 cup granulated sugar
- 1/4 cup vegetable oil (or melted butter)
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- Green food coloring
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a jelly roll pan or line it with parchment paper.
- Whisk together the cake flour, baking powder, and salt in a bowl.
- In a separate bowl, beat the eggs and granulated sugar until light and fluffy, about 5 minutes.
- Add the vegetable oil and extracts to the egg mixture, mixing gently.
- Gradually fold in the flour mixture until just combined, then add green food coloring to your desired shade.
- Pour the batter into the prepared pan and smooth it with a spatula.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Once baked, quickly invert the cake onto a kitchen towel sprinkled with powdered sugar. Peel off the parchment paper and gently roll the cake up with the towel. Allow to cool for about 30 minutes.
- For the filling, mix cream cheese, powdered sugar, and peppermint extract until smooth.
- Once the cake has cooled, unroll it carefully, spread the filling evenly, and roll it back up without the towel.
- Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
