Description

A festive green cake roll filled with a rich cream cheese filling, perfect for holiday celebrations.


Ingredients

  • 1 cup cake flour (or all-purpose flour + cornstarch)
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Green food coloring
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a jelly roll pan or line it with parchment paper.
  2. Whisk together the cake flour, baking powder, and salt in a bowl.
  3. In a separate bowl, beat the eggs and granulated sugar until light and fluffy, about 5 minutes.
  4. Add the vegetable oil and extracts to the egg mixture, mixing gently.
  5. Gradually fold in the flour mixture until just combined, then add green food coloring to your desired shade.
  6. Pour the batter into the prepared pan and smooth it with a spatula.
  7. Bake for 12-15 minutes or until a toothpick comes out clean.
  8. Once baked, quickly invert the cake onto a kitchen towel sprinkled with powdered sugar. Peel off the parchment paper and gently roll the cake up with the towel. Allow to cool for about 30 minutes.
  9. For the filling, mix cream cheese, powdered sugar, and peppermint extract until smooth.
  10. Once the cake has cooled, unroll it carefully, spread the filling evenly, and roll it back up without the towel.
  11. Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
