Instructions
- Prepare your ingredients: Dice onion, bell peppers, and garlic. Set black beans aside.
- Sauté the vegetables: In a large skillet over medium heat, add oil and sauté onions for about 3 minutes. Then add garlic and bell peppers, cooking for another 3-5 minutes.
- Add chicken and seasoning: Increase heat slightly, add chicken, and sprinkle with Cajun seasoning. Cook for 7-10 minutes until browned and cooked through.
- Add black beans: Fold in black beans and heat for about 3 minutes, squeezing in fresh lime juice.
- Assemble your burritos: On a tortilla, arrange chicken and bean mixture and sprinkle with cilantro. Roll tightly, tucking in the ends.
- Cook the burritos: In a clean skillet over medium heat, place burrito folded-side down and cook for 2-3 minutes on each side until golden brown.
