Ingredients

  • 1 cup mascarpone cheese
  • 3 large eggs
  • 1/2 cup honey
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup pistachios, roasted and chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the pistachios on a baking sheet and roast for 8 minutes until fragrant. Allow to cool and chop coarsely.
  2. In a mixing bowl, combine the mascarpone cheese, eggs, honey, and sugar. Beat until smooth and well-combined, then add the vanilla extract.
  3. Gently fold in the chopped pistachios.
  4. Pour the mixture into a prepared springform pan, ensuring it’s even on top. Bake for 45-50 minutes until golden brown and a toothpick inserted comes out clean.
  5. Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  6. Garnish with extra pistachios and a drizzle of honey before serving if desired.
