- 1 cup mascarpone cheese
- 3 large eggs
- 1/2 cup honey
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup pistachios, roasted and chopped
Instructions
- Preheat the oven to 350°F (175°C). Spread the pistachios on a baking sheet and roast for 8 minutes until fragrant. Allow to cool and chop coarsely.
- In a mixing bowl, combine the mascarpone cheese, eggs, honey, and sugar. Beat until smooth and well-combined, then add the vanilla extract.
- Gently fold in the chopped pistachios.
- Pour the mixture into a prepared springform pan, ensuring it’s even on top. Bake for 45-50 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- Garnish with extra pistachios and a drizzle of honey before serving if desired.
Notes
This torte can be served warm or chilled, and allowing it to rest overnight enhances the flavors.
