Ingredients

  • 1 pound large shrimp, fresh or thawed
  • 2 ears of corn, grilled and kernels removed or 1 can sweet corn, drained
  • 2 ripe avocados, diced
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 jalapeño, finely diced (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine olive oil, lime juice, salt, and chili powder. Add shrimp and marinate for 15–20 minutes.
  2. Preheat the grill and skewer the marinated shrimp. Grill for 2–3 minutes on each side until opaque and slightly charred. Remove and chop into smaller pieces.
  3. Grill the corn until charred, then cut off the kernels. If using canned corn, rinse and drain it.
  4. In a large bowl, combine grilled shrimp, corn, diced avocados, red onion, and cilantro. Toss gently.
  5. Squeeze fresh lime juice over the mixture and season with salt and pepper. Mix until combined.
  6. Let the salsa rest for 10–15 minutes before serving to meld the flavors.
  7. Serve with tortilla chips, on grilled fish, or as a side dish.
