- 1 pound large shrimp, fresh or thawed
- 2 ears of corn, grilled and kernels removed or 1 can sweet corn, drained
- 2 ripe avocados, diced
- 1/2 red onion, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1 jalapeño, finely diced (optional)
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a bowl, combine olive oil, lime juice, salt, and chili powder. Add shrimp and marinate for 15–20 minutes.
- Preheat the grill and skewer the marinated shrimp. Grill for 2–3 minutes on each side until opaque and slightly charred. Remove and chop into smaller pieces.
- Grill the corn until charred, then cut off the kernels. If using canned corn, rinse and drain it.
- In a large bowl, combine grilled shrimp, corn, diced avocados, red onion, and cilantro. Toss gently.
- Squeeze fresh lime juice over the mixture and season with salt and pepper. Mix until combined.
- Let the salsa rest for 10–15 minutes before serving to meld the flavors.
- Serve with tortilla chips, on grilled fish, or as a side dish.
