Description

Delicious soft and chewy cookies that combine the flavors of cinnamon rolls and cheesecake, drizzled with cream cheese frosting.


Ingredients

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • For the cinnamon swirl: 2 tbsp brown sugar, 1 tsp cinnamon
  • For the frosting: 4 oz cream cheese, 1 cup powdered sugar, 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, cream cheese, granulated sugar, and brown sugar until fluffy (3-5 minutes).
  3. Add the egg and vanilla extract, beating until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. For the cinnamon swirl, mix 2 tbsp of brown sugar with 1 tsp of cinnamon and set aside.
  7. Drop cookie dough onto the prepared baking sheet and make swirls with the cinnamon mixture using a toothpick or knife.
  8. Bake for 10-12 minutes until the edges are golden and the centers are soft.
  9. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
  10. For the frosting, beat softened cream cheese with powdered sugar and vanilla until smooth, then drizzle or spread over cooled cookies.
