Ingredients

  • ¾ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 1 tablespoon baking powder
  • 1 cup fresh strawberries, diced
  • 4 ounces cream cheese, cut into small pieces
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease or line a muffin tin with paper liners.
  3. In a bowl, whisk together the flour, baking powder, and salt.
  4. Cream together the softened butter and sugar until light and fluffy.
  5. Add in the eggs one at a time, then mix in the milk.
  6. Gradually stir in the dry ingredients until just combined.
  7. Fold in the diced strawberries and cream cheese gently.
  8. Spoon the batter into muffin cups, filling them about ¾ full.
  9. Bake for 20-25 minutes until golden and a toothpick comes out clean.
  10. Allow to cool for 5-10 minutes before transferring to a wire rack.

Notes

For a lighter version, substitute Greek yogurt for some cream cheese, and for gluten-free, use gluten-free flour.
