- 2 cups all-purpose flour
- ¾ cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ cup milk
- 1 tablespoon baking powder
- 1 cup fresh strawberries, diced
- 4 ounces cream cheese, cut into small pieces
- Pinch of salt
Instructions
- Preheat the oven to 375°F (190°C).
- Grease or line a muffin tin with paper liners.
- In a bowl, whisk together the flour, baking powder, and salt.
- Cream together the softened butter and sugar until light and fluffy.
- Add in the eggs one at a time, then mix in the milk.
- Gradually stir in the dry ingredients until just combined.
- Fold in the diced strawberries and cream cheese gently.
- Spoon the batter into muffin cups, filling them about ¾ full.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Allow to cool for 5-10 minutes before transferring to a wire rack.
Notes
For a lighter version, substitute Greek yogurt for some cream cheese, and for gluten-free, use gluten-free flour.
