Description

A delightful moist cake rich with dried fruits and nuts, perfect for any family gathering.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 cups mixed dried fruits (raisins, apricots, cranberries)
  • ½ cup chopped nuts (pecans or walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round or bundt pan.
  2. In a large bowl, whisk together 2 cups of flour, 1 ½ teaspoons of baking powder, 1 teaspoon of cinnamon, and a pinch of nutmeg.
  3. In another bowl, beat 1 cup of softened butter with 1 cup of sugar until light and fluffy.
  4. Add 3 large eggs one at a time, mixing well after each addition.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in 2 cups of mixed dried fruits and ½ cup of chopped nuts.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool for 10 minutes before transferring to a wire rack.

Notes

For extra flavor, add a splash of vanilla extract. Letting the cake sit for a day helps the flavors meld beautifully.
