Ingredients

  • 1 cup almond flour
  • 1 cup powdered sugar
  • 3 large egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • Red food coloring
  • 1/2 cup unsalted butter (softened)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line two cookie sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl.
  3. Beat egg whites in a clean bowl until foamy, then add cream of tartar and gradually mix in granulated sugar until medium peaks form.
  4. Gently fold in the almond flour mixture and add food coloring until desired shade is reached.
  5. Pipe circles onto prepared sheets, leaving space between each, and gently tap the tray to release air bubbles.
  6. Let the piped macarons sit at room temperature for 30-60 minutes to form a skin.
  7. Bake for 15-20 minutes or until they lift easily off the parchment.
  8. Cool shells completely before removing them.
  9. Mix together butter, powdered sugar, and vanilla extract until smooth to make the filling.
  10. Pair similar sized macaron shells, pipe filling on one, and gently press the other shell on top.

Notes
