  • 12 tbsp red gel food coloring
  • 1 tsp peppermint extract
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars until light and fluffy.
  3. Add the egg and vanilla, beating until creamy.
  4. In another bowl, whisk together flour, cocoa, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, alternating with buttermilk.
  6. Mix in food coloring and peppermint extract.
  7. Scoop tablespoons of dough, roll into balls, and place on a baking sheet.
  8. Bake for 10-12 minutes until soft in the center.
  9. Let cool before transferring to a wire rack.
  10. Frost with a mixture of powdered sugar, milk, and peppermint extract.
