Ingredients

  • 1/2 cup cocoa powder
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon mint extract
  • 1 cup dark chocolate, chopped
  • 1 cup white chocolate, for drizzling
  • 1 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, and a pinch of salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Stir in the mint extract.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the chopped dark chocolate.
  7. Scoop rounded balls of dough onto the prepared baking sheets, spacing them about two inches apart.
  8. Bake for 10-12 minutes, then let cool on baking sheets for a few minutes before transferring to wire racks.
  9. Melt the white chocolate and drizzle it over cooled cookies, then sprinkle with crushed peppermint. Let set before serving.
