- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon mint extract
- 1 cup dark chocolate, chopped
- 1 cup white chocolate, for drizzling
- 1 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, and a pinch of salt. Set aside.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Add the eggs one at a time, mixing well after each addition. Stir in the mint extract.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in the chopped dark chocolate.
- Scoop rounded balls of dough onto the prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes, then let cool on baking sheets for a few minutes before transferring to wire racks.
- Melt the white chocolate and drizzle it over cooled cookies, then sprinkle with crushed peppermint. Let set before serving.
