- 1 Spaghetti Squash
- 1 cup Sharp White Cheddar, shredded
- 1 cup Gruyère, shredded
- 1 cup Heavy Cream
- 2 cloves Garlic, minced
- 1 cup Mushrooms (cremini or shiitake), diced
- 2 tbsp Butter
- 1 tsp Fresh Thyme, chopped
- 1 tsp Fresh Parsley, chopped
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper, then place cut-side down on a baking sheet. Bake for 30-40 minutes until tender.
- While the squash is baking, melt butter in a skillet over medium heat. Add garlic and diced mushrooms, sauté until golden and tender, about 5-7 minutes. Set aside.
- Once the squash is cool enough to handle, scrape out the strands into a mixing bowl. Add sautéed mushrooms, heavy cream, shredded cheese, and herbs. Mix well.
- Spread the mixture into a greased baking dish, smoothing the top.
- Sprinkle additional cheese on top for a cheesy crust.
- Return to the oven and bake for another 20-25 minutes until golden and bubbly.
- Let cool slightly before serving, garnishing with extra herbs if desired.
