- 1 cup fresh ricotta cheese
- 2 cups fresh spinach, washed
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 tbsp extra virgin olive oil
- Fresh herbs (basil or parsley) for garnish
- Salt and pepper to taste
Instructions
- Cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve some pasta water, then drain.
- In a large skillet, warm olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add the fresh spinach and sauté until wilted, about 2 minutes.
- Lower the heat and add the cooked pasta, ricotta cheese, lemon juice, and zest to the skillet. Stir until a creamy sauce forms, adding reserved pasta water to achieve desired consistency.
- Season with salt and pepper to taste and stir in fresh herbs.
- Serve immediately, garnished with extra herbs and a drizzle of olive oil if desired.
