Description

A quick and delicious pasta dish featuring creamy ricotta, fresh spinach, and zesty lemon, perfect for a busy weekday meal.


Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup fresh ricotta cheese
  • 2 cups fresh spinach, washed
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp extra virgin olive oil
  • Fresh herbs (basil or parsley) for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve some pasta water, then drain.
  2. In a large skillet, warm olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add the fresh spinach and sauté until wilted, about 2 minutes.
  4. Lower the heat and add the cooked pasta, ricotta cheese, lemon juice, and zest to the skillet. Stir until a creamy sauce forms, adding reserved pasta water to achieve desired consistency.
  5. Season with salt and pepper to taste and stir in fresh herbs.
  6. Serve immediately, garnished with extra herbs and a drizzle of olive oil if desired.
