Description

Ingredients

  • 1 block firm tofu
  • 2 tablespoons nutritional yeast
  • 1 teaspoon turmeric
  • 1 cup fresh veggies (bell peppers, onions, mushrooms)
  • 2 tablespoons fresh herbs (chives, cilantro, or parsley)
  • 1/4 cup plant-based milk (almond, soy, or oat)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. Press the firm tofu for 10-15 minutes to remove excess water, then crumble into a bowl.
  2. Add plant-based milk, nutritional yeast, turmeric, garlic powder, salt, and pepper to the crumbled tofu. Mix well.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Sauté vegetables for 3-5 minutes until softened.
  5. Pour the tofu mixture over the sautéed vegetables, spreading it evenly.
  6. Cook for 5-7 minutes without stirring to create a crust on the bottom.
  7. Fold the omelette in half and cook for an additional 2-3 minutes.
  8. Transfer to a plate, garnish with fresh herbs, and serve warm.

Notes

For extra flavor, feel free to garnish with avocado slices or hot sauce.
