- 1 cup fresh apple cider
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 1 package (8 oz) cream cheese, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs, one at a time, then stir in the apple cider and vanilla.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Drop spoonfuls of batter onto prepared baking sheets, leaving space to spread.
- Bake for 12-15 minutes until lightly touched and springy. Allow to cool on the sheet for a few minutes before transferring to a wire rack.
- For the filling, beat together cream cheese and powdered sugar until smooth, adding vanilla.
- Once cooled, pair whoopie pies and spread filling on flat sides, pressing together.
- Dust with powdered sugar if desired.

Ensure ingredients are at room temperature for the best texture. Allow to cool completely before adding filling.
