- 1 loaf of thick bread (brioche or challah)
- 4 large eggs
- 1 cup whole milk (or almond/oat milk)
- 2 cups plain cornflakes
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons butter (for frying)
- Maple syrup or powdered sugar (for serving)
Instructions
- In a large mixing bowl, whisk together the eggs, milk, vanilla, cinnamon, and nutmeg until smooth.
- Dip each slice of bread into the custard, allowing it to soak for a few seconds on each side.
- Spread the crushed cornflakes on a plate and press each side of the soaked bread into the cornflakes.
- In a skillet over medium heat, melt a tablespoon of butter. Once sizzling, add the cornflake-coated bread and cook until golden brown, about 3 to 4 minutes on each side.
- Keep cooked slices warm in a preheated oven while you prepare the remaining slices. Dust with powdered sugar or drizzle with maple syrup before serving.
Notes
For a gluten-free option, use gluten-free bread. You can also add berries, bananas, or chopped nuts as toppings.
