A vibrant and creamy pasta salad bursting with fresh tomatoes, mozzarella, and basil, perfect for sunny gatherings.
Ingredients
- Short pasta (fusilli or penne)
- Fresh mozzarella (bocconcini or larger balls)
- Ripe tomatoes (heirloom, cherry, or grape)
- Fresh basil
- Extra virgin olive oil
- Balsamic vinegar
- Minced garlic
- Salt
- Pepper
Instructions
- Cook the pasta according to package instructions until al dente. Reserve some pasta water if needed.
- While the pasta cooks, wash and chop the tomatoes into bite-sized pieces, and tear the mozzarella into rough chunks.
- In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Once the pasta is ready, drain it and let it cool slightly. In a large bowl, combine the pasta, tomatoes, mozzarella, and basil.
- Pour in the dressing and toss gently until everything is coated.
- Chill in the fridge for at least 30 minutes before serving.
- Serve cold or at room temperature, garnished with extra basil or balsamic glaze.
Notes
For gluten-free options, substitute with gluten-free pasta. Allowing the salad to chill enhances the flavor.
