Description

A vibrant and creamy pasta salad bursting with fresh tomatoes, mozzarella, and basil, perfect for sunny gatherings.


Ingredients

  • Short pasta (fusilli or penne)
  • Fresh mozzarella (bocconcini or larger balls)
  • Ripe tomatoes (heirloom, cherry, or grape)
  • Fresh basil
  • Extra virgin olive oil
  • Balsamic vinegar
  • Minced garlic
  • Salt
  • Pepper

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve some pasta water if needed.
  2. While the pasta cooks, wash and chop the tomatoes into bite-sized pieces, and tear the mozzarella into rough chunks.
  3. In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  4. Once the pasta is ready, drain it and let it cool slightly. In a large bowl, combine the pasta, tomatoes, mozzarella, and basil.
  5. Pour in the dressing and toss gently until everything is coated.
  6. Chill in the fridge for at least 30 minutes before serving.
  7. Serve cold or at room temperature, garnished with extra basil or balsamic glaze.

Notes

For gluten-free options, substitute with gluten-free pasta. Allowing the salad to chill enhances the flavor.
