- 1 cup cottage cheese
- 2 large eggs
- 1 1/2 cups all-purpose flour (or whole wheat flour)
- 1 teaspoon baking powder
- 1 teaspoon minced garlic

- Herbs and spices (dill or chives suggested)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the spinach, cottage cheese, and eggs. Mix until well incorporated.
- In another bowl, whisk together the flour, baking powder, minced garlic, and salt and pepper.
- Gently fold the dry ingredients into the wet mixture until just combined. Ensure the dough is somewhat sticky but manageable.
- Shape the dough into round discs about half an inch thick, making a small hole in the center of each.
- Place them on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Let them cool for a few minutes on a wire rack before serving.
Notes
For extra crispiness, broil the flagels for a minute or two at the end, keeping a close eye to avoid burning. Ensure proper moisture management of the spinach to avoid a wet dough.
