Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the spinach, cottage cheese, and eggs. Mix until well incorporated.
  3. In another bowl, whisk together the flour, baking powder, minced garlic, and salt and pepper.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Ensure the dough is somewhat sticky but manageable.
  5. Shape the dough into round discs about half an inch thick, making a small hole in the center of each.
  6. Place them on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
