- 1 lb boneless, skinless chicken (breast or thighs)
- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- Salt to taste
- 1/4 cup fresh cilantro, chopped
- 1 lime, for squeezing juice
- 2 tbsp olive oil
Instructions
- Dice the chicken into bite-sized pieces and season with salt, cumin, paprika, and chili powder. Let it marinate for about 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add diced onions and garlic, sauté until translucent, about 2-3 minutes.
- Add the seasoned chicken to the skillet and cook until golden brown, about 5-7 minutes.
- Stir in the chopped bell peppers, then add the rice, mixing until the rice is coated with the oil and flavors.
- Pour in the broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes.
- Check if the rice has absorbed all the liquid; cover and cook for a few more minutes if needed.
- Remove from heat, stir in freshly chopped cilantro and a squeeze of lime juice.
- Fluff the rice with a fork and serve hot, garnished with extra cilantro and lime wedges.
