Ingredients

  • 1 lb boneless, skinless chicken (breast or thighs)
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, for squeezing juice
  • 2 tbsp olive oil

Instructions

  1. Dice the chicken into bite-sized pieces and season with salt, cumin, paprika, and chili powder. Let it marinate for about 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add diced onions and garlic, sauté until translucent, about 2-3 minutes.
  3. Add the seasoned chicken to the skillet and cook until golden brown, about 5-7 minutes.
  4. Stir in the chopped bell peppers, then add the rice, mixing until the rice is coated with the oil and flavors.
  5. Pour in the broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes.
  6. Check if the rice has absorbed all the liquid; cover and cook for a few more minutes if needed.
  7. Remove from heat, stir in freshly chopped cilantro and a squeeze of lime juice.
  8. Fluff the rice with a fork and serve hot, garnished with extra cilantro and lime wedges.
