- 1 lb boneless chicken breasts or thighs
- 8 oz pasta (fettuccine, penne, or rotini)
- 2 cups fresh broccoli florets
- 1 cup heavy cream or half-and-half
- 1 cup freshly grated parmesan or mozzarella
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp butter
- Fresh basil and oregano, to taste
- Salt and pepper, to taste
Instructions
- Cut the chicken into bite-sized pieces and season with salt, pepper, and garlic powder.
- In a skillet, heat olive oil over medium heat and sauté the chicken until golden brown, about 6-8 minutes. Remove and set aside.
- In the same pot, boil salted water and cook pasta according to package instructions, adding broccoli during the last 2-3 minutes.
- In the skillet, melt butter and sauté garlic until fragrant. Pour in cream and bring to a gentle simmer. Stir in cheese until melted and creamy, seasoning with salt and pepper.
- Drain the pasta and broccoli, and add to the skillet with chicken. Toss until well-coated and heated through.
- Garnish with additional cheese and fresh herbs. Serve warm.
Notes
Feel free to experiment with spices or substitute ingredients as desired. Leftovers can be reheated or frozen for later.
