Description

A heartwarming dish combining tender chicken, vibrant broccoli, and creamy pasta, perfect for family gatherings.


Ingredients

  • 1 lb boneless chicken (breasts or thighs)
  • 2 cups fresh broccoli florets
  • 8 oz pasta (penne or rotini)
  • 1 cup heavy cream (or half-and-half)
  • 1 cup Parmesan cheese (or cheese blend)
  • 2 cloves fresh garlic, minced
  • 1 onion, chopped
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional, for garnish)
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat and add a drizzle of olive oil and a pat of butter.
  2. Season chicken with salt, pepper, and herbs and sauté until golden brown, about 6-8 minutes. Remove and set aside.
  3. In the same skillet, sauté onions and garlic until fragrant.
  4. Pour in heavy cream and bring to a gentle simmer.
  5. Stir in cheese until melted and creamy.
  6. Add broccoli and simmer until tender, about 4-5 minutes.
  7. Cook pasta according to package instructions until al dente, saving some pasta water.
  8. Toss cooked pasta with the creamy mixture and add chicken back in. Adjust thickness with reserved pasta water.
  9. Taste and adjust seasoning. Garnish with cheese and fresh herbs before serving.

Notes

Substitute leftover rotisserie chicken or swap broccoli for asparagus. Don’t forget to season each component for the best flavor.
