- 2 lbs beef (Chuck roast or stewing beef)
- 2 tablespoons Hungarian paprika
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 bell peppers, diced
- 4 cups beef broth or stock
- 2 bay leaves
- Salt and pepper, to taste
- 2 tablespoons olive oil or lard
Instructions
- Heat a large pot or Dutch oven over medium-high heat and add olive oil or lard.
- Add the beef, browning it on all sides. Remove and set aside.
- Sauté diced onions in the same pot until translucent, about 5 minutes. Add minced garlic and sauté for another minute.
- Stir in carrots and bell peppers; cook for an additional 5-7 minutes until softened.
- Mix in the Hungarian paprika, toasting for a minute to enhance flavor. Return the beef to the pot.
- Add beef broth until it covers the meat and vegetables.
- Season with bay leaves, salt, and pepper. Bring to a gentle simmer, cover, and cook on low heat for 1.5 to 2 hours until meat is tender.
- Taste and adjust seasoning. For a thicker stew, simmer uncovered for the last 30 minutes.
- Ladle into bowls and serve with a dollop of sour cream and a sprinkle of parsley, if desired.
Notes
For a vegetarian option, substitute beef with mushrooms or lentils. Allow goulash to rest for 15-20 minutes before serving to meld flavors.
