Description
A rich and hearty stew featuring tender short ribs, aromatic vegetables, and a deep, flavorful broth, perfect for cozy gatherings.
Ingredients
Scale
- 3 pounds bone-in short ribs
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, diced
- 2 sprigs fresh thyme
- 2 bay leaves
- 4 cups beef broth
- 1 cup red wine
- Salt and pepper to taste
Instructions
- Prep the Short Ribs: Season short ribs generously with salt and pepper and let come to room temperature.
- Sear the Meat: In a heavy pot, heat oil over medium-high heat and brown the short ribs on all sides. Remove and set aside.
- Sauté the Aromatics: In the same pot, add onions and garlic, cooking until soft and fragrant.
- Add Vegetables and Herbs: Add carrots and celery, sautéing briefly before stirring in thyme and bay leaves.
- Deglaze with Wine: Pour in red wine and scrape browned bits from the pot, letting it reduce for a couple of minutes.
- Combine Everything: Return the short ribs and add beef broth. Bring to a gentle boil, then cover and simmer for 2-3 hours.
- Final Touches: Add potatoes 30 minutes before serving. Adjust seasoning if needed.
- Serve and Enjoy: Ladle into bowls and serve with bread or mashed potatoes, garnished with parsley.
Notes
For a lighter option, substitute chicken thighs for short ribs or use mushrooms for a vegetarian version. This stew freezes well for up to three months.
