- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 2 tsp baking powder
- 1 cup finely ground pistachios
- 8 oz mascarpone cheese
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a mixing bowl, whisk together the flour, baking powder, and ground pistachios.
- In a separate bowl, beat the butter and sugar until light and fluffy, about 5 minutes.
- Add eggs, one at a time, mixing well after each addition.
- Gradually add the dry ingredients and milk, alternating, until well combined.
- Evenly divide the batter into the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool for 10 minutes in the pans, then transfer to a wire rack to cool completely.
- In a mixing bowl, whip the heavy cream until soft peaks form, then fold in the mascarpone.
- Layer the cakes, adding mascarpone mixture and crushed pistachios between each layer.
- Frost the top and sides with the remaining mixture and garnish with whole pistachios.
- Chill for at least one hour before serving.
Notes
Room temperature ingredients make mixing easier. Don’t forget to chill the assembled cake for the best flavor melding.
