- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/4 cup lime juice
- 1 tsp lime zest
- 2 large eggs
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- Green food coloring (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of lined muffin tins.
- In another bowl, beat cream cheese, sugar, lime juice, lime zest, and eggs until smooth. Add green food coloring if desired.
- Spoon the cheesecake filling onto the crusts in the muffin tins, filling them about three-quarters full.
- Bake for 20-25 minutes until the edges are set but the center jiggles slightly. Let cool before refrigerating for at least 2 hours.
- Remove from muffin tin, serve on a platter garnished with whipped cream and lime twist.
Notes
Avoid overbaking; the center should remain slightly soft. Let the bites cool completely before refrigerating to ensure proper setting.
