Ingredients
- Chicken (breast or thighs), boneless
- Heavy cream
- Fresh garlic, minced
- Mushrooms (cremini or button), chopped
- Fresh spinach
- Chicken or vegetable stock
- Fresh basil, chopped
- Fresh oregano, chopped
- Olive oil
- Parmesan cheese, grated
- Salt and pepper, to taste
Instructions
- Prepare your ingredients by chopping the mushrooms and mincing the garlic.
- Sear the chicken in a large skillet with olive oil over medium-high heat for 5-7 minutes on each side until golden and cooked through (internal temperature of 165°F). Remove and set aside.
- In the same skillet, add more olive oil if needed, then sauté the garlic for 30 seconds until fragrant, followed by the mushrooms for around 5 minutes until caramelized.
- Pour in the stock and reduce for a minute before whisking in the heavy cream. Season to taste and bring to a gentle simmer.
- Return the chicken to the sauce, add the fresh spinach, and let simmer for 5-10 minutes.
- Stir in the grated Parmesan cheese and chopped basil just before serving. Optionally drizzle with fresh lemon juice for brightness.
