Description

Ingredients

  • Chicken (breast or thighs), boneless
  • Heavy cream
  • Fresh garlic, minced
  • Mushrooms (cremini or button), chopped
  • Fresh spinach
  • Chicken or vegetable stock
  • Fresh basil, chopped
  • Fresh oregano, chopped
  • Olive oil
  • Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Prepare your ingredients by chopping the mushrooms and mincing the garlic.
  2. Sear the chicken in a large skillet with olive oil over medium-high heat for 5-7 minutes on each side until golden and cooked through (internal temperature of 165°F). Remove and set aside.
  3. In the same skillet, add more olive oil if needed, then sauté the garlic for 30 seconds until fragrant, followed by the mushrooms for around 5 minutes until caramelized.
  4. Pour in the stock and reduce for a minute before whisking in the heavy cream. Season to taste and bring to a gentle simmer.
  5. Return the chicken to the sauce, add the fresh spinach, and let simmer for 5-10 minutes.
  6. Stir in the grated Parmesan cheese and chopped basil just before serving. Optionally drizzle with fresh lemon juice for brightness.
