Ingredients

  • 8 oz Cream Cheese, full-fat
  • 1/2 cup Powdered Sugar
  • 1 cup Fresh Cranberries
  • 1/2 cup Whipped Cream
  • 1 cup Ginger Snap Cookies, crumbled
  • 1 tsp Vanilla Extract
  • 1/2 cup Water

Instructions

  1. In a saucepan over medium heat, combine cranberries, sugar, and water. Cook until cranberries burst, about 10 minutes. Let cool.
  2. In a bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
  3. In another bowl, whip the heavy cream until soft peaks form. Gently fold into the cream cheese mixture.
  4. In mini dessert cups, layer ginger snap crumbs, cranberry filling, and cream cheese mixture. Repeat layers, finishing with cream.
  5. Chill in the refrigerator for at least 120 minutes before serving.
