- 8 oz Cream Cheese, full-fat
- 1/2 cup Powdered Sugar
- 1 cup Fresh Cranberries
- 1/2 cup Whipped Cream
- 1 cup Ginger Snap Cookies, crumbled
- 1 tsp Vanilla Extract
- 1/2 cup Water
Instructions
- In a saucepan over medium heat, combine cranberries, sugar, and water. Cook until cranberries burst, about 10 minutes. Let cool.
- In a bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
- In another bowl, whip the heavy cream until soft peaks form. Gently fold into the cream cheese mixture.
- In mini dessert cups, layer ginger snap crumbs, cranberry filling, and cream cheese mixture. Repeat layers, finishing with cream.
- Chill in the refrigerator for at least 120 minutes before serving.
Notes
For an extra touch, garnish with additional cranberries and crushed cookies before serving.
