- 1 lb flank steak or sirloin, sliced thinly against the grain
- 1 bunch fresh scallions, chopped (white and green parts separated)
- 3 tbsp soy sauce
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 tbsp vegetable oil
- 2 tbsp cornstarch
- 1 tsp sugar
Instructions
- Prepare the Ingredients: Slice the beef against the grain into thin strips. Chop the scallions, separating the white parts from the green. Mince the garlic and ginger.
- Marinate the Beef: Mix the beef with soy sauce, cornstarch, and sugar in a bowl. Marinate for 15-30 minutes.
- Heat the Skillet: Preheat a large skillet or wok over high heat and add a splash of oil.
- Stir-Fry the Beef: Add the marinated beef in a single layer. Sear for 1-2 minutes without stirring, then flip to cook the other side. Remove beef from skillet.
- Cook the Aromatics: In the same skillet, add more oil if needed. Sauté the minced garlic and ginger until fragrant, about 30 seconds.
- Add Scallions: Stir in the white parts of the scallions and cook for another minute.
- Combine: Return beef to the skillet, add green parts of the scallions, and toss to combine with a drizzle of soy sauce.
- Finish: Stir-fry for another minute and serve hot with steamed rice or noodles.
Notes
For a gluten-free option, use tamari instead of soy sauce. You can add vegetables like bell peppers, snap peas, or broccoli for added nutrition.
