Ingredients

  • 1 lb flank steak or sirloin, sliced thinly against the grain
  • 1 bunch fresh scallions, chopped (white and green parts separated)
  • 3 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tbsp vegetable oil
  • 2 tbsp cornstarch
  • 1 tsp sugar

Instructions

  1. Prepare the Ingredients: Slice the beef against the grain into thin strips. Chop the scallions, separating the white parts from the green. Mince the garlic and ginger.
  2. Marinate the Beef: Mix the beef with soy sauce, cornstarch, and sugar in a bowl. Marinate for 15-30 minutes.
  3. Heat the Skillet: Preheat a large skillet or wok over high heat and add a splash of oil.
  4. Stir-Fry the Beef: Add the marinated beef in a single layer. Sear for 1-2 minutes without stirring, then flip to cook the other side. Remove beef from skillet.
  5. Cook the Aromatics: In the same skillet, add more oil if needed. Sauté the minced garlic and ginger until fragrant, about 30 seconds.
  6. Add Scallions: Stir in the white parts of the scallions and cook for another minute.
  7. Combine: Return beef to the skillet, add green parts of the scallions, and toss to combine with a drizzle of soy sauce.
  8. Finish: Stir-fry for another minute and serve hot with steamed rice or noodles.

Notes

For a gluten-free option, use tamari instead of soy sauce. You can add vegetables like bell peppers, snap peas, or broccoli for added nutrition.
