Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 2 eggs
  • 1 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 1 cup chopped strawberries
  • 4 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease an 8×8-inch baking dish.
  3. In a bowl, combine the rolled oats, baking powder, and cinnamon.
  4. In another bowl, whisk together the eggs, milk, vanilla extract, and maple syrup.
  5. Pour the wet ingredients into the dry and combine gently. Fold in the strawberries and cream cheese.
  6. Spread the mixture evenly in the baking dish and add extra strawberries on top.
  7. Bake for 30-35 minutes until golden and set.
  8. Cool slightly, then cut into squares and serve warm.

Notes

Serve with additional maple syrup or yogurt. You can also add nuts for extra crunch!
