- 2 cups rolled oats
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- 2 eggs
- 1 cup milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
- ¼ cup maple syrup
- 1 cup chopped strawberries
- 4 ounces cream cheese, softened
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly grease an 8×8-inch baking dish.
- In a bowl, combine the rolled oats, baking powder, and cinnamon.
- In another bowl, whisk together the eggs, milk, vanilla extract, and maple syrup.
- Pour the wet ingredients into the dry and combine gently. Fold in the strawberries and cream cheese.
- Spread the mixture evenly in the baking dish and add extra strawberries on top.
- Bake for 30-35 minutes until golden and set.
- Cool slightly, then cut into squares and serve warm.
Notes
Serve with additional maple syrup or yogurt. You can also add nuts for extra crunch!
