- 1 cup granulated sugar
- 4 large eggs

- 2 tsp vanilla extract
Instructions
- Preheat your oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan. Bake for 10 minutes, then allow to cool.
- In a large mixing bowl, beat cream cheese until smooth. Gradually blend in melted white chocolate until fully incorporated.
- Add sugar and eggs one at a time, mixing until just blended.
- Fold in crushed pistachios gently, keeping some chunks for texture.
- Pour the filling over the cooled crust. Bake for 55 to 60 minutes, or until edges are set but the center jiggles slightly.
- Let cool to room temperature before chilling in the fridge for at least 4 hours or overnight.
- Release the springform pan and top with chopped pistachios and white chocolate shavings before serving.
