Instructions

  1. Preheat your oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan. Bake for 10 minutes, then allow to cool.
  2. In a large mixing bowl, beat cream cheese until smooth. Gradually blend in melted white chocolate until fully incorporated.
  3. Add sugar and eggs one at a time, mixing until just blended.
  4. Fold in crushed pistachios gently, keeping some chunks for texture.
  5. Pour the filling over the cooled crust. Bake for 55 to 60 minutes, or until edges are set but the center jiggles slightly.
  6. Let cool to room temperature before chilling in the fridge for at least 4 hours or overnight.
  7. Release the springform pan and top with chopped pistachios and white chocolate shavings before serving.
