Instructions
- Pat lamb chops dry and season with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat and sear lamb chops for 3-4 minutes on each side until golden brown.
- Remove chops and let rest. Lower heat, add butter, garlic, and thyme to the skillet; sauté until fragrant.
- Stir in Dijon mustard; thicken sauce with water if necessary.
